Indian prices are no less than Dhanvantari “god of medicine”. We have this treasure in our kitchen and we don’t know its true value. Each and every spice not just bring flavor to or food but also adds nutritional value.

yes, agree spices an integral part of our Indian cuisine and we can not imagine to cook our traditional recipes without using them. here in USA, i missed the freshness of various spices like we get in India. loved your post and the way you have explained of each spices with great detail.
Another interesting thing about spices is that their flavour varies with the region. I got some dhania seeds from Uttarakhand and they tasted absolutely different, really nice for pulaos. My fave are Lakadong turmeric from Meghalaya and Black Pepper from Kerala.
I swear nothing can beat the Indian spices which add so much aroma and flavor to food. That is the reason the entire world loves Indian spices and food.
I use all these every day. Turmeric and mustard are must additions to our curries. Cardamom, cinnamon, and cumin n all are components of our post-digestive teas. Fenugreek for a morning detox. Of these, I was unaware of the goodness of mustard. Thanks for the eye-opener.

Indian spices pack a lot of flavor and have healing properties too. As someone with drug allergies, turmeric is one I swear by. Completely agree with you about Indian kitchens and spices. The only time spices are not used is during mourning or cooking for the sick.
